Summer recipe: Ciao Carb lasagne

Now that the summer is here, we are more in the mood to enjoy our favourite dishes. At the same time, however, this is the season where we are most concerned about our weight, and what our bodies will look like when we step onto the beach.

SYMMETRIA recommends an ideal choice, with the fantastic series of low-carb Ciao Carb products, which allow you to enjoy Italian flavours without feeling guilty about indulging. So, if you want to cook up a super calorie conscious meal for yourselves, your families or your friends, try our favourite recipe for Ciao Carb lasagne with chicken, spinach and mushrooms.

Ingredients:

  • 500 gr. chicken (white meat, without any skin or bones)
  • 2 ½ tbsp. olive oil
  • 1 ½ cup chopped onion
  • 2 tbsp. grated garlic
  • ½ tsp. chopped rosemary
  • ½ tsp. ground red pepper
  • 8 Portobello mushrooms
  • 170 gr. fresh spinach
  • 1 ½ cup 1,5% fat milk
  • ¼ tsp. nutmeg
  • ½ cup parmesan cheese
  • 12 sheets Ciao Carb lasagne
  • 140 gr. low fat mozzarella 
  • ½ cup coconut flour

 

Instructions:

1) Place the chicken in a pan over medium to high heat. When it starts to turn golden, add ½ cup water and bring to the boil for 18-20 minutes, or until it is cooked. Remove the chicken from the pan. When it has cooled down, cut it into small cubes.  

2) In a separate, large pot, over medium to high heat, add 2 tbsp. oil, the onion, garlic, salt, rosemary, pepper and mushrooms. Saute for 8 minutes. Then, add the spinach and cook for an additional 2 minutes. Remove the pot from the heat. Add the chicken to the pot with the cookes vegetables.

3) Preheat the oven at 170o C.  

4) In a third, small saucepan, over medium to high heat, bring to the boil the milk, flour and nutmeg, while mixing well. Add 1 tsp. salt. Cook for about 5 minutes or until the mixture becomes thick, and then remove the pan from the heat. Mix in the parmesan cheese.

5) In a well greased 20cm cooking tray, add 1 cup of the thick sauce you just made, and add 4 Ciao Carb lasagne sheets on top. On top of the lasagne sheets, add 1 ½ cups of the chicken mixture, ¾ cup more of the sauce and ¼ cup mozzarella, making sure the lasagne sheets are completely covered. Add the remaining 4 lasagne sheets, and then add the remaining chicken mixture, sauce and mozzarella.   

6) Place tin foil on top and bake at 190ο C for 25 minutes. Remove the foil and bake at 190ο for another 10-15 monutes, or until it is golden. Let it rest for 5 minutes before serving.
