Catalonian flavours based on the SYMMETRIA 360o Pro-G Diet

The medical team of SYMMETRIA, taking into regard the Pro-G-Diet, suggests an authentic Catalonian dish which will spice up your daily cooking routine.

Barcelona style shrimp ‘’con Catalan ensallada’’ (with Catalan salad)

For the shrimp


Serves 3 as a main course (or 6 as an appetizer)

  • 340 gr small or medium shrimps, shelled and de-veined
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 garlic cloves, whole
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon paprika
  • 2 tablespoons chopped parsley
  • Juice of ½ lemon
  • 1 teaspoon fine grain sea salt



1) Sprinkle the salt on your shelled shrimp and let aside for aprox 10 minutes.

2) Heat your 2 Tbsp of olive oil in a skillet over medium to high heat

3) Add your garlic cloves, minced garlic and red pepper flakes and saute’ for 30 seconds until fragrant.

4) Then add your shrimp, and will constantly stirring, cook until they turn pink (should take around 2,5 minutes)

5) Add the fresh lemon juice, paprika, pepper and salt and cook for 1 additional minute.

6) Sprinkle with chopped parsley to give a fresh taste to your course

For the Catalan salad:


  • 6 heads green chicory
  • 6 plum tomatoes
  • 6 shallots, finely sliced
  • 225 g green beans, lightly cooked and cooled

For the dressing:

  • 4 tbsp sherry vinegar
  • 8 tbsp olive oil
  • pinches celery salt
  • pinches fennel seeds
  • pinches pepper


  1. Separate the chicory leaves, wash and dry them and make with them a base layer on a flat salad plate.
  2. Pile the tomato slices on top, followed by the shallot slices. Scatter over the beans and the artichoke slices.
  3. To make the dressing, mix together the sherry vinegar and the oil. Add a pinch of celery salt, a pinch of fennel seed and season with salt and freshly ground black pepper.
  4. Pour the dressing over the salad and serve immediately.
